Never tried it. Is it to seal the juices in? Last time I saw a recipe suggesting flouring it was in Mum's (very) old Good Housekeeping which she lent me while I was a student (in the seventies). Excellent book - even had a chapter on how to give a dinner party with only one servant ;D

That's just plain silly how could one manage to give a propper dinner party with only one servant - who would be topping up the wine glasses while the solitary servant was dealing with the fish course? What would happen if the telephone rang - who would answer it? I thought Good Housekeeping gave
practical advice not suggestions which would give the working classes idea above their station. I am surprised.
and probably helps thicken the gravy, too...
