Title: black breadcrumbs

My teaser for today......

A couple of weeks ago I purchased some fresh chicken breasts on the cheap cheap counter at the Coop.  There were 4 in the pack, and I made them in to kiev type things, stuffed with herby garlic butter.  I rolled them in flour, egg and breadcrumbs and cooked 2, which we had for our tea.  Now the other 2 were tightly wrapped  in clingfilm and frozen.  I took them out of the freezer yesterday, unwrapped them and put them in the fridge to thaw.  Thing is, now they have thawed, some of the breadcrumbs have discoloured and turned black!  Any ideas why, and are they edible??  Am thinking of rinsing them uinder the tap and re-breadcrumbing!

I have no idea why they have turned black, EJ, but I don't think I would eat them.

Good oh, they went in the bin and we had a dinner rethink.  Really odd.  I have frozen things like that before and never had a problem.  I did wonder if it was the colour from the herbs in the butter leaching through into the crumb.  Oh well, next time I won't coat them, I will freeze them in the nude and crumb them before cooking.  Thanks for your help.

I wonder if it was the blood from the chicken that turned them black?
