Any butternut squash recipes please i had the veg for the very first time tonight & found it quite bland to say the least. Low fat recipes only please. Thank you. ;D

Why dont you marinade it, slice then bake it in the oven. My marinade is chili, garlic olive oil various herbs and honey, It's lovely!

soup, soup and more soup, especially when we get the cold weather next week, spice it up with some garlic, chillie, carrot and onions all roasted then blitzed with stock, lovely  ;D

Don't be put off Rosebud as they can vary a lot in flavour.  I usually start by roasting [you can peel them after roasting as it's easier] with garlic in olive oil & then either make soup or rissotto - leave the garlic unpeeled then squeeze it over the squash.  yum  :)

Rosebud, I just know I am going to get it for saying this but....on my squash scale of flavour  all the butternut family are bland,there are much better tasting squash. Try a Kuri or Delicata type.

Sadly, butternut squash do taste better for a bit of butter.

If you have an oil/fat quotient per day it's worth using it on the squash. 

We peel and chunk a Bnut squash, put it in a roasting tray with a few halved dried chillies (less, if you like things a little less spicy), drizzle them with oil (rosemary oil or even chilli oil works well) and roast them.  About 10 minutes before they're done, break over some feta cheese and roast again for the final 10 mins.

We put this with roast/griddled chicken, cous cous & tagines, BBQ's or (when beloved Protein & Carb Man (OH) is out) just by itself as a meal.

Thank you all for your suggestions i shall have another go. i so agree with you J, but i will give the garlic a go just love the stuff.  Rosebud. ;D

I usually make soup with red peppers and garlic and chilli but I think I'll try roasting them as well and adding them pre-roasted to risotto sounds like a great idea!
