Title: liver dumplings

Fancied some 'adult' food, the children (aged 20 and 17) both replied 'ugh' when I suggested liver dumplings. Not being deterred, I considered how to make them, having never made dumplings before. My wife suggested two parts self raising flour to one part vegetable suet as a starting point.

The following developed ...

1 lb of lambs liver, very finely chopped (lost a bit of thumb somewhere too)
1 small onion very finely chopped
5 mushrooms, again fine chopped (because they happened to be there)
a dusting of black pepper
half a packet of suet (veg preferred but ended up with beef suet)
about twice as much self raising flour

mix all ingredients thoroughly in a large mixing bowl and then add just enough water to make the mixture bind together

roll into small balls (walnut size) and drop into boiling water for about 10-15 mins

my wife prepared some onion gravy to accompany them, and we ate them with oven chips (no fresh spuds available boohoo) and freshly picked leeks (yum yum).

Seriously traditional food here, recipe notwithstanding, suitable for all the diehards out there !

Never heard of liver dumplings will have to have a go someday. We eat liver,bacon,onions  & gravy with mash & peas. My kids all eat it too.

Kinda like faggots then....just not baked.  I loathe liver, but love faggots and pate so would probably have given them a go.  Bangers, egg and chips here after a day on the plot.

Popular in Germany and Austria I believe, known as Leberknoedel. We first tasted them as a soup in the Tyrol after a hard day's walking. Being ravenous, we devoured them.

Upon tasting the cooked dumplings, I remarked on how similar to faggots they are.

Saw keith Floyd being taught how to make these liver dumplings on the TV the other day.

He had a problem getting the dumpling mixture to fall off the spoon into the simmering water.

The chef told him to keep dipping his spoon in some hot water,the mixture slid of the spoon easily.

was intrigued to read of this mouth watering recipe (liver dumplings) - never had it before but fancy it now :P

however, I fancied some real 'gutsy dumplings' at the beginning of last week when it was so cold so made myself some and added tiny chunks of thick ham (from the deli counter at my local supermarket) also added a good amount of chopped , some of which I'd blitzed but not all cos I like the chunks of veg. and cooked for 20 minutes - absolutely delish!

btw I make dumplings to a half & half ratio - i.e. 4oz. flour, 2 oz. vegetable suet - add other things if I want, herbs etc. always works for me :)

Dumplings are a fave in our house, even with the kids  ;D

Might substitute the lambs liver for chicken liver though.

what it should say is this

"also added a good amount of chopped parsley along with seasoning - dropped dumplings into some earlier made mixed veggie soup, some of which I'd blitzed et. etc.
