- do remember:
1. To put the cheese/breadcrumb mix on top.
2. Try a cheese mix - ie Red Leicester, Cheddar, Parmesan.
3. Add a leek - &/or a carrot.
4. DON'T overcook the veg.
5. Don't forget the mustard & nutmeg!
6. Do use a shallowish dish so that there's always topping for the veg.

Tim thats exactly what I made last night! Great minds and all that! My Cheese mix was leftover Cheddar, Red Leicester and Gruyere, and yes I did the breadcrumbs on the top too, even had the broccoli in there as well!(and the mustard and nutmeg in the sauce ;))
My sister was staying, and she says she normally puts some of the cauli cooking water into the cheese sauce too!
Ours was as delish as yours looks. ;D (And there is a bit left over for tonight too!)
As you so perceptively say, left over Brocoli too!!
And yes, the water if it's from the steamer. Otherwise not worth the hassle.
I am the only one who likes Cauli Cheese in my house, so rarely get to have it. Might make myself one in honour of this Tim. It looks absolutely gorgeous. Yum yum. x
It does look gorgeous, just what i need tonight too as i've got this blasted stinking cold that's going around. I often have cauli cheese as my main (in place of the meat everyone else is eating) yummy!

Hi Tim, I don't use breadcrumbs when I make cauliflower cheese. My son loves it and I just make him a rich cheese sauce using the microwave starting with bechamel sauce. Its so easy that way. I did do a fish pie today just like the photo. It had plenty of cod, with bones removed, very creamy potato and a lot of grated cheddar on top plus sliced tomato on top. It's interesting, our different ways of doing these well known recipes. I have tried a couple of convenience meals but am never satisfied and always return to home cooked food.
As you so rightly say.
Thing about breadcrumbs, apart from the crunch, is that processing a slice of wholemeal in with the cheese is so easy.

Couldn't agree more Tim. I have finally won the battle of where the food processor lives. Now it is firmly esconced on the kitchen worktop and all these delights become so much easier. ;) :D We're having smoked haddock risotto tomorrow with mangetout. Not in the slightest bit relevant but I thought I'd share it with you. ;)

I love Cauliflower cheese ,my Mum said that my Grandad grew woppers, sadly i never tasted them. When i make them i add nutmeg too, also dried mustard. My mum used to addsome of the leaves which i do. I like goats cheese and motzarella on mine , the crumbly topping on yours looks so good will try that next time. :)
