Title: W.I. Chocolate Chip Cookies

I know I was asked to post the recipe for these, and finally I have remembered to bring the cookery book upstairs.  They are great, slightly chewy yet crispy around the edge cookies.  Make them as big or as small as you like.  They won't last five minutes!

80g softened butter
80g muscovado sugar
30g demerara sugar (I used granulated as I didn't have any)
1/2 teaspoon vanilla extract
1 egg, beaten (Obviously we used milk, enough to make a dough)
175g self-raising flour
115g chocolate chips or choc chopped into small pieces (we used milk and white choc chips)

Preheat oven - gas 4, elec 180/fan 160.

Grease 2 baking sheets or line them with parchment

Cream butter and sugars toether until light and creamy.  Beat in vanilla and eggs.

Gradually mix in the flour and stir in the chocolate. 

Place dessertspoon dolops onto the baking sheets and press them down slightly with a fork.  Leave space for them to spread.

Bake for 12-15 minutes until the cookies are golden in colour.

Carefully lift them off the sheet and leave to cool...IF YOU CAN!!!!  ;D

They sound lovely - if I cook them mid morning it might get my 18yr old son out of bed!!

Oooh, Emma, thank you.  It is half term for my lot this week and I have 3 fluey males to look after!  They still have their apetites though so I could tempt them with these!  They are really cross at being ill in half term.... :(

you are a very very naughty lady giving us a choc chip cookie recipe. i will have to go and cook them immediately.

followed by pancakes which i forgot to do yesterday.

bang goes my diet.  ::) ??? ;D

So sorry for posting the recipe...and just to make things worse, if there are any other chocolate recipes you fancy, just ask as this WI cook book is just chocolate recipes and there are over 70, including chicken with chocolate!

mmm funny you should say that actually as i once had a chicken dish with a chocolate sauce in a mexican restuarant and it was delicious. really yummy.  wouldnt mind a recipe for that if it sounds mexicanish.

only kidding about the cookies btw.  ;D

Chicken Mole - Mexico's most famous dish.  :D just for you Sarah.  ;D

4 large chicken breasts, skin on
2 garlic cloves, crushed
1 onion, peeled and chopped roughly
1/2 teaspoon crushed dried chillies
450ml light chicken stock
1 fresh red chilli
80g flaked almonds
80g fresh breadcrumbs
1 tablespoon sesame seeds
1/2 teaspoon ground cinnamon
15ml olive oil
400g can of chopped tomatoes
40g plain chocolate, broken into small pieces
salt and pepper
4 teaspoons sesame seeds, toasted to serve.

Place chicken, garlic, onion and crushed chillies in a large saucepan and add the stock.  Bring to the boil, cover and simmer for 40 minutes until the chicken is cooked.  Remove the chiken with a slotted spoon and strain the stock, reserving 425ml.  Remove the skin from teh chikcne and then cut it into large chunks.  Cover the chicken and keep warm.
Place the fresh chilli, flaked almonds, breadcrumbs, sesame seeds and cinnamon in a blender and process until smooth with about half the reserved stock.  Heat the oik in the saucepan and add the blended mixture, frying gently for a couple of minutes.  Add the tomatoes and simmer for 1 minute and then gradually add the remaining stock and chocolate.  Simmer gently for 5 minutes, stirring often.  Season to taste.
Add the chicken to the mixture, bring to the boil and simmer gently for a further 2 minutes.  Serve with toasted sesame seeds sprinkled over each portion.

Couldn't go to the allotment today because of the heavy rain, so I have spent the afternoon baking. I made some flapjacks and your chocolate chip cookies EJ.  Made them all while watching the "100 best musicals ever" on the TV, what a perfect combination for a wet afternoon. And they taste yummy, so just about to have a cup of peppermint tea and one or two, or three or four!  :D :P busy_lizzie
