Title: Freezing JA's

May have to dig up a lot of JA's all at once because of bugs on the tubers.

Does anyone freeze JA soup or have recipes suitable for freezing?

I've never frozen JAs Barnowl, but if I had to freeze, I'd steam em for 20 minutes until just soft, squidge em out of the skins, and pack into flat pint/500ml bags to freeze for soup :)

Surely in this soft state they would also be just as good in the receipes mentioned previously: risotto, gnocchi etc.  The only thing I wouldn't be keen on doing would be mashing them as they seemed rather fluid retentive to me and soggy mash ain't that nice!

Since it seems no-one's actually tried it, I suppose it's guinea pig time ..... oink
