Global? No Gobbly Warming. Just wanted to prove the 'resting' theory. 5-10deg increase they say, when out of the oven. So underestimate the cooking time. In fact, with a 5.5kg bird, it was a 7deg increase. Makes a difference?
Did it the Golden Promise way - breast down for 2 hours & then up for the last 30 min or so. No foil, no baste, no faff. I now like Turkey!! So do the G/cs
Hindsight? Moaning on about infusing onions etc for Bread Sauce? Followed the 'bring to the boil & take off the heat to infuse 45 min' recipe. Gave it 2hrs. NOT good. All other recipes say stew gently for an hour or so!!
Recovered the situation to some extent by adding another infusion of spices. So now re-using the onions for another batch!
At least it helped No2nextdooor cope with the ten eaters.
But WHY did we buy a Christmas cake??
