Or the 2 hrs acclimatisation from the fridge?

So - that means getting up a touch earlier. You can always slow things but you can't hurry them!!

And if you want a crispy skin, breast side down until 30 min before end, then up. No foil until the resting period.

I always find a considerable period between the meats coming out of the oven, and their consumption, since all the cooking gets done before we sit down for the first course ... with the possible exception of the gravy ... the microwave showing its true value in bring food back to temperature for serving  :D

I am currently preparing the leek and potato soup, at my father's request ...
