Hi folks, just trying to get Xmas dinner thought about, I have was thinking of doing my roast potatoes in goose fat this year, having never done this can you help??
Where can I buy goose fat from..(tesco didn't have any/much of anything!)
How much do I use?
Sorry for the probably stupid questions...got mother in law coming for lunch and don't want to make a fool of myself!!

If you can't find goose fat, you could use good LARD ;D
Matt, you can get goose fat from the butchers in the Covered Market in Oxford.
Watch out for the wild boar. ;D

Always save Duck fat from the occasional bird. Almost as good. Frozen in blocks like the stock.
Waitrose sells goose fat in jars - I've just given away the last of last year's which had been in the freezer.

You just put about a cm in the bottom of a large tin and preheat in a fairly hot oven, then proceed as usual. If you don't have that much, then use whatever you do have! (if you have a goose, you have way more than that!)

MB, it's ages since I roasted a goose - we're having one for New Year now, chicken at Xmas. Can you remind me how to do a good job please? :P and is there a way that doesn't involve filling the kitchen with blue smoke? ;)

Hiya Matty, i bought goose fat today in a tin from Sainsburys - had to ask where it was (and i work there lol) but it was on a stand in the fruit & veg aisle. I've been persuaded (even tho' i'm a vegetarian) to use it for the roasties as Nigella recommended it the other night and my husband has jumped on her bandwagon so to speak lol! :o Good luck & have a merry Christmas! x
