I've started sprouting mung beans, we eat them raw and in stir fries, any other way of using them ? :)

I am Indian so I say curried.
For about two mugfuls of sprouted mung beans, I'd heat a couple of table spoons of oil add pinch of hing(aka asafoetida), half a teaspoon each of cumin and mustard seeds. Once seeds start to pop, add sprouted mung beans, quarter of a teasoon of turmeric, salt, chili, ground coriander and cumin, fresh lemon juice to taste (and passata if you like) add a mug of water and let the lot cook until the water is almost evaporated and it tastes great either as it is or with rice (basmati, of course!)
Forgot to say - do not overcook - they taste best when they are just tender.
