Title: mushroom burgers

Hi, has anyone got a nice recipe for mushroom burgers, I currently buy the cauldron ones but would prefer to make my own, our local fruit shop regularly gets in boxes of mushrooms for £2.00 so we usually end up having mushrooms with everything, nice but would like to be able to freeze some   :)

not an actual recipe  - got an idea though - could try making a mushroom risotto (would need to be quite solid - so let it rest for a while or be really careful measuring your rice v water)

then shape into burgers and egg, flour, breadcrumb, cheese etc...

Jamie Oliver had a recipe for fried risotto balls so am sure it would work. 

We had lovely fresh field mushrooms covering the football pitch, must have picked about 5-6lbs of them, still got a couple of litres of soup in the freezer, minus the cream of course!

I've got this one on file but don't know where I originally found it. I've not used 2 sorts of mushrooms tho - have only had flat mushrooms to hand. The balsamic vinegar gives a lovely flavour. I've frozen  burgers before going on to the cooking stage & they cooked from frozen OK.



 
2 tablespoons olive oil, divided
1 large shallot, finely chopped
2 pounds portobello mushrooms, finely chopped
1/2 cup button mushrooms (roughly chop)
2 garlic cloves, minced
1/2 cup carrots, minced
1/4 bunch of Italian parsley, washed, stems removed, finely chopped
2 cups fresh bread crumbs (about 3 slices)
1 egg
1 1/2 tablespoons balsamic vinegar
Salt and pepper to taste
4 ounces Stilton cheese, crumbled
Hamburger buns

In a small saute pan over medium heat, heat 1 tablespoon olive oil and saute shallot until translucent. Add mushrooms, garlic, carrots and saute for 10 to 15 minutes, until most of the liquid from mushrooms has evaporated. Remove from heat and pour mixture into a large bowl. Let cool. Stir in parsley, bread crumbs, egg, balsamic vinegar and salt and pepper to taste. The mixing spoon should stand in the mixture. If not, add more bread crumbs Preheat oven to 400 degrees F.
Shape mushroom mixture into 4 burgers. Heat remaining oil in a large saute pan over medium high heat and sear until golden on both sides. Crumble cheese over the top and place pan in oven for 15 minutes until lightly browned. Remove each burger to a bun and serve with traditional garnish of sliced onion, tomato and fries.

Some time ago Nigel Slater had a TV series, and on one programme he had Nigella Lawson.  They made what might have been be termed vegetarian steakburgers.  What they did was fry a very large horse mushroom in butter, garlic and parsley.  I can't remember whether the baps were toasted, but, having fried the mushrooms, they put them on to the baps, together with the pan juices.

We have done this recipe several times, but unfortunately floppy disc drive is not working at the moment, so cannot access full recipe:-

(a) they were delicious, and
(b) I'm sure, with the above basics, it is not above the capabilities if A4A cooks to improvise!!

sounds yummy , all the mushrooms in these boxes are button but will print and keep,  :)

One place we have been going to recently is the Bakewell Farmers' Market (last Saturday of the month), ie this coming Saturday.  One of the highlights is a mushroom stall.  They have fresh ceps, giant putffballs,  chanterelles, wood blewits, etc,etc.  They also have 1.5 kilo baskets of button mushrooms (what they call souping mushrooms)  for £2.00.  The market is supposed to be from 9.00 a.m., but we aim to get there by about 8.30. and it is in full swing.

If you are a mushroom 'nut', it is an absolute must, but you must be prepared to queue, but well worth the effort!!

Going off at a slight tangent, we combine the trip with a visit to the Chatsworth Farm Shop.  The meat counter there is a carnivors's delight!!  On the way back we visit Hartington Cheese shop for a bit of best Stilton.

If anyone is in reasonable distance, can recomment the trip.

They are delicious, arn't they katy!!  With all the buttery, garlicky juices, yum.

Sorry manics that it's not nearer you, but if you are ever in the region, it's worth a detour.
