I love it :

in stocks,
braised in Chicken stock - in sticks or in halves,
with Cream Cheese,
stir fried,
in Jambalaya,
pickled.

I always have a stick or 2 in the freezer for adding to stock in an emergency.

But why not Celery Soup? Delicious!

But in the end, there are more important things to take up freezer room?

I made this soup using quite a lot of Celery cmoppared to the recipe amount (and celeriac as well). Don't have to use Cavolo Nero, any Kale/green cabbage should work. Very tasty!

Celery soup's gorgeous! Either made by sweating onions, salt,  just a touch of fresh green chilli?...adding cut-up pieces of celery, chicken stock, cook til celery's tender, then blitzing...reheating adding milk and/or cream, or making a more robust soup by adding diced potato?

or..

substituting fish stock for chicken & adding lime leaves...addition of chopped shrimp optional...

Can all be frozen before adding milk/cream if you're going that way

And it's SO healthy!!
