Just been searching my recipe books for a recipe and couldnt find one anywhere.
So I decided to improvise with what I had ie a few carrots, pumpkin, onion and vegetable stock cube.
Just stuck all the veg in a pan of boiling water and simmered to soften it all. Then whizzed it through the blender with a bit of butter and the vegetable stock.
I know it may sound basic to some of you out there but I really aint a big cook and I am sat here very pleased with myself because it is absolutely delish!
Cheap and cheerful as well ;D
trina
sounds like my recipe, just garlic and chilli extra, doesn't it make you feel good, making soup, :D
;D I like basic, I like cheap and cheerful ;) I may well give it a go as I have 3/4 of a small pumpkin left.
Thanks Trina. ;)
Trina, I did the same, the extras I had lurking in my fridge were celery and potatoes, threw in some mild curry powder whilst cooking off the veg too, best pumpkin soup I have ever made, bet I won't be able to repeat it tho! :-\
So great to eat homemade soup! ;D
Nice one Trina, you can't go far wrong with this sort of soup as it's all down to a) what you fancy and b) what's in the cupboard! ;D
Besides, ever come across the acronym KISS (keep it simple stupid)? It's a good rule and I'd say it applies as much in general cooking as everywhere else.
For a specific recipe, though, might I recommend Delia's "Pumpkin Soup with Toasted Sweetcorn". Really nice and simple, though we usually end up using butternut or similar.

Delia Online actually seems to be really good - the search function works well and covers at least all three "How to Cook" books - gotta be easier than leafing through (especially at work ::) ;)). As I expect you've all found, although rather over prescriptive, her recipes do universally work right without any need for interpretation or adaptation.

this delia recipe is our favourite - is even better with butternut squash instead of pumpkin!
I used a recipe off A4all last year that was really good but I really can't remember who posted it. I will see if I can find the recipe and put it back on here.

And this is one of my faves... absolutely perfect for a miserable November evening :D
