Ive grown a 76 pound pumpkin..dead chuffed with it. Me and my girls hollowed it out this am and i've used 3 lb of it to make pumpkin soup...does this soup freeze well?
Also, i still have loads left...can you freeze pumpkin and if so how?

oo yes, pumpkin soup freezes well
so does pumpkin. To save room in your freezer, boil it down to a mush with just enough water on the bottom of the pan to prevent catching, then bag and freeze. I use a pressure cooker - 6 mins at High is enough :)

I still have some pumpkin soup frozen from last year - we also used it as the starter for our Christmas dinner, since my father had not tasted pumpkin soup before ...
we've just had some spicy pumpkin soup, actually summer squash, took it to the plot for our lunch, freezes brilliantly and tastes wicked :o
No, i've not posted a picture as i haven't got a digital camera (i know i must be the only person in the world...but we need our central heating renewed nxt year and we are saving like mad for this).
Anyway i'm dead proud of my pumpkin. It is lit up outside in my front garden for people to see at the moment (we carved it this am)
