Does anyone have a tried and tested christmas pud recipe that is already scaled down for 2 people? There's only me and OH and I like pud, but just on the day :)
I know I can scale down a proper recipe, but I'm feeling lazy :D

My mum always made the pud a couple of months early, and let it mature like with christmas cake.
So pleeeease if someone's got a tasty recipe could they post it ;D

I always make Delia Smith's pudding from her Christmas cookery book, the recipe is for one large pudding but I make 2 small puddings, one for Christmas and one for Easter.
If you really wanted to just make it for 2 about a third of the recipe would be right I think.
I just use Guinness for the stout and barley wine bit, and usually brandy for the rum, or Bacardi has been known to go in! It makes a beautifully moist pudding that just falls apart when you cut it, ooh, getting quite excited now... :)
Because they are moist I do store them in the fridge to be on the safe side.

I make ours a year in advance!!! :o Tis an old family recipe, passed on to the eldest daughters (tho I am the youngest, only one that likes to cook!) we can trace it back at least 4 generations (I think!) I actually make them commercially to sell, though with moving this year it is looking bad for next! But sorry Moggle, not allowed to divulge the "secret" recipe to you, swore to the family! :-X

Thanks all, looks like it's the delia recipe for me. I wonder if it would work the same wrapped in calico and boiled rather than steamed?
