I put some in late (end of August under fleece) as none had germinated in spring and now the fleece is about 1' above the rows... might get a decent crop yet!

If they're monstrous now, they could well get coarse & hairy if left in?
I would do belt & braces & store some.

You can store them in a bucket of sand. Cut the leaves off and lay them in a tray of damp sand so not touching each other Store them in a dark cool place. Thats what i would do if i had carrots but had no luck this year :(

I put about half in a clamp, and the rest seem happy under their straw cosy. They are biennials after all! ::) ;D
I still have the best part of 6 rows of Autumn King carrots in the ground. I'm storing half in boxes of sand and the rest I`ll leave in the ground. The ones in left in the ground I shall be drawing up the soil around the carrots just like earthing up spuds to give them a little protection until I use them.
Frost? I'm not too sure. They don't seem to suffer?
Sand? I prefer peat - the reclaimed sort.
Cool, dark? How could anything not be cool & dark in a mound of sand/peat??
I'm going along with powerspade's earthing up method.
But I'm trying to eat loads as well. Question - how much carrot & coriander soup does it take to turn one's skin orange? :o

LOL @Lish. I haven't dared to look at my cossetted carrots yet. Lost them all last year to the fly so have them in enviromesh this year.
I'll be delighted if I have the problem of deciding how to store them! ;)

my first crops are all in my tummy :'(
the ones i sowed in pots much later on are still at the teensy tinsy stage. i doubt if they'll ever get big enough to eat. :'(
