I have an apple glut (Cox) and I am also starting on the kale (cavalo nero). I have just noticed how absolutely delicious kale is with apple sauce, so I am passing it on. Maybe you all know this, but it is a new idea for me. I shall be slicing, cooking and freezing apples from now on to add that sweetness and sharpness to the kale. Lemon juice in the apple gilds the lily to perfection, in my opinion.
and don't forget colcannon - with apple sauce as well, why not - the irish would love it I'm sure ;)
