It's great done with Onions, garlic, apple, cinnamon, nutmeg and cloves, whitewine vinegar, sugar and marge.... Braised red cabbage with apples (Delia Complete Cookery part one... pg 206 BBC edition 1978)

Just a little tip when pickling.  If using raw ingredients like red cabbage use vinegar cold.  If using cooked ingredients use warm vinegar.
