One of the old timers on my allotments told me to put my potatoes in my greenhouse for a few days to dry them before bringing them home. i did this - and i think some are a bit green! he promised this wouldn't happen! how green is too green to eat?
how do you guys dry potatoes before storing them?

Some people you shoud'ny really east green spuds at all, if only a little is green i just cut a peel it out.
I spread mine out on a sheet on the lawn for a few hours on a sunny day.
I agree with Keef, if its not too green,I peel it off or cut it off.
I dig my pots on sunny dry days and leave on the soil for the skins to toughen up for a few hours/shades x.
I suspect that in the case of your potatoes, unshamrock, the green will be only skin deep or very slightly more. Just peel it off down to the normal colour and eat what`s left.
Two to 3 hours on a warmish day is quite sufficient to dry off the skins for storage.
