Title: Preserving pears?

I have masses still, even though I have bottled some.  Any other ideas?  I have looked for pear jam, but wonder if I shuold just peel, quarter and freeze.

What about tarte tatin with pear? Its the French upside down cake that is traditionally with apples, but I make it with every fruit available. You just need to adjust the amount of sugar.

The best thing about tarte tatin (well: second best thing) is that it's flat and you can stores a lot of layers in your freezer.

I remember in an earlier life, when I use to cook Sunday dinner every week, and entertain regularly, I used to do a pear and banana pie, with moscavado sugar. No recipe, but I know that from this description, you could create your own impressive dish ... :)

Well, having scoured my collection of WI books, I am going to make a jam called High Dumpsey Dearie jam, which uses apples, plums and pears!  I am also going to make a couple of pear tarts, and was thinking about doing another bottle, but in a mulled syrup rather than just plain sugar syrup.  Any ideas how I would go about that?  Am thinking of using a couple of cloves, cinnamon bark, slither of orange and lemon peel either in the syrup, or in with the fruits?  And what about using a drop of booze for that Christmassy effect??

Have a similar situation here with pears, and am going to try the PRESERVED PEARS in the Mrs Beetons link: http://www.mrsbeeton.com/31-chapter31.html  (search on this page for PRESERVED PEARS using edit and find)
Have had a go at candying lemon peel and also angelica with some success, so will have a go at pears too I think :)

Pear and black currant jam is fantastic. I know it's past currant season, but perhaps you could use blackberries or elderberries?
