Can anyone please help me as which is the best pickling vinegar to be use for pickling Shallots, I have found one certain shop pickled onions which are the bees knees.

Personally, I would always go for Sarsons. You can get plain malt, ready spiced and white vinegar, and it is vinegar.
A lot of places sell 'non-brewed condiment' and basically all this is is ascetic acid, and anything pickled in it will be extremely sour. You really need to read 'the small print'.

But, GB - as one OAP to another, do you mean what spiced vinegar is best?
There was much about this some time ago - could look it up if you wish?
By far the best shop ones I've had have been Garners.
As another, somewhat dozy OAP, are we talking bought pickled shallots, or own pickled shallots?
Personally, I buy the pickling onions and basic Sarsons malt vinegar, and 'spice' it myself.
When it comes to buying vinegar, I would repeat my earlier warning, re non-brewed condiment.
