Title: Have you ever wondered about Red/Purple Caulis/Cabbages?

I always thought that Caulis, at least, turned green in cooking.

I think I've set a new Gourmet fashion?? Asked Jill at www.organicplants.co.uk about it & she said add a tsp Lemon juice to the steaming water to retain the colour. And this - http://www.howstuffworks.com/question439.htm

me too, Squash..I think they look FAB! Presumably cooking purple french beans with lemon will have the same effect?
