Title: How do you preserve your aubergines

Ive made masses of ratatouille, and frozen it,  can you just freeze your aubergines on their own, do you have to prepare them in any way.

I just do them on their own as for ratatouille - so that they can be used in moussakas etc later.

Quick answer - as long as any other cooked food.

I freeze it in easily thawable portions.
