Title: Jeremy - freezing peppers?
Post by: tim on September 03, 2006, 18:49:28
A while ago?

I hate to say it, but at least a year!! One of the least affected fruits.

Well wrapped of course.

I'm still eating inferno peppers - and gypsy - from last year. Lots of stir fries on the menu in the coming week or two  :) - have to make room for the new seasons harvest.

Do you freeze the peppers whole, or sliced, and do they need blanching?  I would like to freeze some to use in stir-frys later in the year if possible.  Also do you defrost them before cooking or cook them from frozen.

I don't blanch.
Mostly, I de-seed & freeze whole for stuffing. I then stuff frozen & cook. Or thaw first!! Remember to suck out all the air.

Elsewise, I fry-up with aubs or onions ready for ratatouille etc.
