I have a feeling this should be in the 'Drink' section, but I've started so I'll finish......
Found this recipe in Jane Grigsons 'Good Things' and thought it worth a try.
2 good handfulls of French tarragon
1 pint brandy or marc
3/4 lb sugar
1/2 pint water
Put the tarragon,picked on a hot ,dry day,into a bottling jar.Pour on the brandy,fasten the jar tightly,and leave in a cool place for at least a month.
At the end of this time make a syrup by boiling the sugar and water togerther for 5mins.Let syrup cool.Strain off the tarragon brandy into a bowl,add the syrup gradually,tasting from time to time.When the flavour appeals to you,stop adding syrup. If flavours are too strong,add a little water.Throw away the tarragon,and pour back into bottling jar.
One fresh tarragon branch may be added for appearance.
Stage 1 today using 1/2 quantities. It looks sooooo beautiful !
