Title: Pickles and Chutneys
Post by: Linda Tal on August 24, 2006, 12:34:46
Just a quick question - I know that I need to use wax discs when making jam but do I need to use wax discs when I make chutney and pickles ???

I've not seen them mentioned in pickle recipes but I thought I'd better ask you lot :D

Help!

Linda

I don't use wax discs unless I am using the celephane type lids.  I have jams, pickles and chutneys which are a couple of years old and they are fab with no deteriation.  Now some sciency peep will come along and tell me that actually they are deteriating and I will slowely get plum pickle poisoning!

Thanks Emma Jane, I had a feeling that I didn't need to, as I'd not seen them mentioned in the recipes.

Linda.

Hi, agree with EJ, I only use wax discs on both jam and chutney, when the jars have no lids, and I'm using the cellophane tops instead

Also use them in jars of chutney with metal lids, as rumour has it that the vinegar in the chutney can attack the metal lids!  :D
