No stock is worth its salt without them, but there are times when they are unavailable. None on the last 2 visits to the shops.

Yes. I often find when I crawl in from work I can't bear the thought of having to spend hours cleaning them and the like so I pull a batch of them, cut up while still nice and plump and unshrivelled, and open freeze the slices. Perfect for stir fries and, well, anything that needs leeks. Any left at the end of the season get frozen before they bolt and to last the summer.

Yes! I do stew/stock bags for the freezer at the end of parsnip pulling season! I chop up leeks, carrots, 'snips and any other roots that have overwintered and bag them up - nice and easy, out of the freezer, straight into the stock pot! :)
