Title: More uses for those blackberries!!

Due to my abundance of those d**n blackberries, been trawling the cookbooks.
Hope these two might be of some use.

For those of us who like a tipple, (who doesn't?)

Blackberry Liqueur

Makes about a litre

1kg blackberries
300ml good red wine
500g caster sugar
300ml brandy

Wash blackberries well and put in large stainless steel or enamel pan. Add wine.
Bring to boil and simmer for about 20 mins until fruit is soft.
Strain in muslin lined sieve, until fruit stops dripping.
Measure juice.  Should be about 600ml. If short, top up with red wine.
Pour into clean pan, add sugar and heat gently until sugar is disolved.
Allow to cool, and add brandy.
Seal into sterilised corked or screwtop bottles.
Store in cool dark place for at least a month before using.

Port and Blackberry Curd

225gms blackberries
4fl oz port
75gm butter
75gm sugar
3 x size 3 eggs

Wash blackberries and place in pan with port.
Simmer until tender, leave to cool and strain as above recipe.
Place liquid in bowl over pan of simmering water, add butter and sugar, and stir until butter melted, and sugar disolved.
Beat eggs together and strain into blackberry mixture.
Keep stiring until mixture thickens, (should be about 15mins) and coats back of  spoon.
Pour into warm, sterilised jars.
Add wax paper seal and allow to cool.
When cold, lid, label and store in cool place.
Keeps about 3 months.

Keep the blackberry recipes coming.  Still have loads!

Shaz,
are you still heating the mixture (for the blackberry curd) when you add the eggs or is this bit without heat? I don't want to end up with blackberry flavoured scrambled eggs .... although, maybe that wouldn't be tooo bad!

Oops, sorry Jane.  Brain in front of eyes while typing!

You keep the bowl over the simmering water while you add the eggs.  I assume that's why it's on a low heat and you have to keep stiring, so you don't get scrambled eggs.

if you do try the blackberry scrambled eggs let me know!!!!!  I prefer cheese and onion in mine, but owt to use up the darn blackberries!

Got another load today.  Made Queen of puddings with a blackberry layer under the meringue. G'kids loved it.

Thanks Shas, I will try it out. We just can't seem to take the dog out for a walk without coming back with a big bag of berries at the moment!
