Has anyone tried this recipe from Recipes 4 All? We have just had it for lunch and it went down really well.

I used one very large, almost marrow sized courgette, 5 large bulbed spring onions and one fat clove of garlic with one pint of stock, it was delicious and a good way of using a missed big courgette. Will be making some more to freeze later.

keep one whole courgette back and grate it. When the rest of the soup has been whizzed, add the grated courgette. The texture is marvelous and really adds to the soup.

But first, make your Summer Stock. 3 1/2 litres. Down the garden - cabbage, chard, celery, no leeks so onions, every available herb, carrots............& an hour & a half later we can strain & add the courgettes, sauteed in onion & garlic, pasta, chilli, oregano, white wine, chives, basil etc.
Right - we now have soup!!
This was the stock. And the soup. Yes - I know, it said small dice, but I thought we would whizz it, so left it too big. Oh,well - scissors?
