Courgette - 300g per person
10 shallots
3 cloves garlic (or to taste)
Grated mature Cheddar & Parmessan
Halloumi cheese (optional)
Grate the courgettes, finely chop the shallots and crush the garlic.
gently fry these of with a thingy of butter or olive oil. When almost cooked add cubed halloumi cheese if you want and cook through.
Serve with pasta or as a side vegetable with grated cheese on top and a dash of chilli oil.
I do a variant of that where I grill the sliced courgette with olive oil and lemon, plus some chopped garlic. Then griddle the halloumi in slices briefly. Sprinkle over chopped mint/basil, and serve over salad. Delish!
