Has anyone good summer recipes for using fennel. I have 4 bulbs almost ready to cut.

I like fennel with Parmesan cheese. Cut in quarters, boil for 10 minutes. Then place in an ovenproof dish, drizzle with olive oil and grate some Parmesan over it. Roast in the oven. Lovely with roast chicken!
I've also used fennel in a fish pie, this time sliced.

One pot roast chicken, fennel and garlic
85g butter
3 bulbs of fennel sliced lengthways
2 carrots, roughly chopped
1 bulb garlic, separated
1 medium chicken, jointed into 4 or 8 pieces
Quarter of a bottle of dry white wine
1 tbsp French mustard
Bunch thyme
500ml (1pt) chicken stock
A little plain flour
Melt half the butter in a large flameproof oven dish on the hob and add the chopped , sliced veg. Stir for a couple of minutes
Remove from heat and lay chicken pieces on top. Combine the mustard, wine and stock and pour over the chicken. Scatter over some sprigs of thyme and place into an oven heated to 180°C/350°F, gas 4 for about an hour.
Pour the liquid out of the pan and strain. Mash the remaining butter into the flour to make a paste. Slowly whisk this into the liquid to make a sauce and pour it over the chicken and serve.

I used to make a cream of Fennel soup, a cream of Fennel and Celery soup, and a cream of Celery soup.
They were variations on a recipe I made up. I think I used to finely chop the fennel/celery and soften gently in butter, adding onion and water and letting it simmer, then adding milk to finish. I don`t remember using cream but I ended up with a pale green soup that was full of flavour. I ate it lots one summer, 20 years ago.
This year I have a row of fennel growing nicely so I can revive the recipe.

Thanks also for the recipes as I am growing Florence Fennel for the first time and needed a few hints on what to do with it. You have given me a few ideas! :) busy_lizzie
A fennel virgin here too, so these soup suggestions are most welcome (I adore fresh soups).
I like fennel baked in cream. Quarter the bulbs, fry in butter for a few minutes, pop in ovenproof dish, pour in some cream, season, bake in oven for 45 mins approx until tender. Also very good with some cubed pancetta/bacon added and browned at the beginning - a meal in itself with some nice bread.
uktvlive a few weeks back had a recipe for Fennel and Tomato Lasagne by Frank Bordoni. It is delicious you should give it a try.
