I have been trawling throug my cook books as I have a glut of courgettes and figured most of us would so here's some recipes.
Meditterranean Courgette Pie
500g/ 1 lb Courgettes
90 / 3oz parmesan cheese, grated
90g / 3oz Mozzarella cheese
2 eggs, lightly beaten
2-3 tbsp ready made pesto
2 - 3 garlic loves, crushed
1 tsp dried mint
salt and pepper
260g/8oz puff pastry
beaten egg for glazing
23cm / 9in square baking dish or tin
Method
1. grate the courgettes into a large bowl, then blot off any excess moisture with a papaer towel. Add the parmesan, mozzarella, eggs, pesto, garlic and mint, and season with salt and pepper. stir well to mix then spoon into tin/dish.
2. roll out the pastry into a rough square, about 2.5cm/1 in larger than the dish/tin and 3-5mm / 1/8 - 1/4 inch thick. Cover dish/tin with pastry, trimming the edgeas. Cut slits in top with a knife
3. Cut out shapes from the pastry trimmimgs, using a shaped pastry cutter if you like. Brush the top of the pie with beaten egg, arrange the pastry shapes on top and glaze with beaten egg.
4. Bake the pie in a preheated oven at 200C/ 400F/ Gas 6 for 15 - 20 minutes until lighlty browned on top and puffy. Serve hot
I have not tried this yet but it looks good. It's from one of Mary Berry's books.
OH stuffed several courgette flowers with a mixture of courgette, onion and cheese.They were then fried in a light batter.Lovely!!
Last night I heated up some oil in wok, chucked in some crushed garlic, chucked in some chopped up courgette and rosemary, fried for a bit, then added some halved cherry toms (from the garden) and heated through, then added some crumbled goats cheese and served immediately. I was loverly ;D, and I could have eaten another bowl full!
Here is my own recipe for using up some of those mountains of courgettes. ::)
Cut some potatoes and courgettes into approximately 1 inch squares. Place in an ovenproof dish which has a little olive oil on the bottom. Add some chopped onion or shallots (red ones are the best) and some olives.
Wash and cut 1 or 2 lemons in half and squeeze the juice over the vegetables. Cut the shell of the lemon halves into two and add them to the mixture with some more olive oil. Add any seasoning and herbs if desired. Stir the mixture so that everything is coated.
Place dish in oven and cook at a temperature of 120ºC stirring occasionally. When the potatoes are soft and have browned a little, the food is ready. The mixture can take over an hour to cook depending on the type of potato used.
This is a recipe that can be varied according to taste, adding tomatoes, peppers or chillies to the original mixture of vegetables. :D
Does anyone have any recipes for stuffed courgettes? I've been growing rondo de nizza and although I can use them like any other courgette they seem particularly adapted to being stuffed.!!
Nothing can beat courette and fresh pasta. Fry the courgette in butter for a few minutes then add to the paste with lots of parmessan - delicious.
Last year I also found a recipe fr courgette cake on the web - particuraly popular in Oz it seems - but my great aunt said it was tasteless
I made the bread yesterday from Tim's [thank you Tim] recipe which I printed off last year & it was really good though too sticky for the rolls so just made one big round loaf. I have also been making stuffed, round courgettes usually stuffed with a mixture of mushrooms, onions, garlic & breadcrumbs, covered with foil & baked for an hour or so or stuffed with Quorn mince added to the above - either is delicious.

PS The ' CHEESY BAKED COURGETTES ' recipe calls for two grated eggs, any suggestions?

I made stuffed courgettes the other day, and stuffed marrow, basically made aspaghetti bolognese sauce with mince or veggie mince, but without tomatoes, as these are very wet, then popped this into scooped out courgettes and gretaed cheddar on the top, baked in oven for 30 mins - mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm - delicious ;D
Thank you for the stuffed courgette suggestions! :D As soon as I have enough Rondo de Nizza (... should that be rondi de nizza??? ::)) to do one each for all the family I'll give it a go. :)

My version uses
1 aubergine
2-3 courgettes
500g cherry toms
1-2 red/yellow/orange peppers
lasagne sheets
bechamel sauce
cheddar
I slice the aub and courgettes about 5-10mm thick, cut the peppers in to a large dice, and halve the cherry toms. Roast for about 45 mins or so in a 200+ degree oven.
Assemble layers of roasted veg and lasagne sheets. Top with bechamel and grated cheddar. Bake half an hour or so in 180ish degree oven till golden on top.
You could always up the courgettes if you have a glut, and leave out the aubergines. I have roasted the veg a few days before when the oven has already been on, and kept them in the fridge till I needed them.
My mum has a lovely recipe for courgettes from her Readers Digest freezer cookbook.
It's simple but delicious.
We have it with pork chops or steak.
If you have any left over you can whizz it up in a blender and use as pasta sauce or pizza topping. There are 2 of us so I make double and use the rest for another meal.
You can adapt the recipe with chillis or extra garlic. What ever you want really.

Courgettes Milano (serves 4)
500g sliced courgettes (I like to mix yellow and green)
6 sliced spring onions or 1/2 red onion
Clove crushed garlic
Fresh basil
Pinch paprika
4 tomatoes or 1/2 tin
Tablespoon tomato puree
Bay leaf
Salt and pepper
30ml white wine
Fry onions and courgettes 5 minutes
Add rest of ingredients, cook 15 mins
Serve
Vegetarian stuffed marrow/courgette
Genoese stuzzichini
Scoop out flesh of marrow/courgette. Discard tough seeds.
Boil together a couple of peeled whole onions and peeled potatoes.
(Or, you can use left-over mashed potatoes and sauteed sweated onions)
Drain the potato-onion mixture well (I kind of squeeze the onion between 2 plates).
Mash this together with the marrow/courgette flesh plus an egg and LOTS of parmesan cheese. Add fresh or dried oregano. Season with salt, pepper.
Stuff marrow/courgette with 'mash' mixture. Add a layer of breadcrumbs on top.
Drizzle with olive oil or dot with butter.
Bake in a medium hot oven. Tongue You can stuff sweet peppers, mushrooms, large onions the same way--the stuffing base is potato, onion, courgette/marrow, oregano, cheese
We like them braised in stock. Slice the courgettes and layer in an over proof dish. Poor over some fairly strong chicken stock to just cover them and top with some chopped parsley (if you have some) and a generous grating of parmesan.
Cook at 180-200 C until it looks done!
