Title: Really Silly Question - vinegar!

Hi all, I've been making chutney and pickles for the last week or so, and it's really good as most of the ingredients are from my own garden or very local, however the question is this:

Can I make vinegar!?!

I know that wine goes vinegary if left too long, can I speed up the process?

What other liquids can I use?

Help ???

Oh dear, I'm going to have to test my memory a bit.

I'm not sure if it was on this site, one of the others I visit.

The short answer is yes you can.  Someone asked the same question, and someone else posted a website re making vinegar.  I'll have a look later tonight and see if it all comes back to me!!!

Haven't Googled for an answer, but just noticed in an old thread that it said 'don't drink vinegar'. I do. Cider vinegar & honey is great for arthritis!!

you can make your own vinegar, but every wine needs a mother. Wine cannot turn into vinegar on its own. You can try to make a mother by putting the wine in a large-mouth jar covered with cheesecloth and placing in a warm spot for several weeks -- or until it smells like vinegar. A mother is a gelatinous mass that turns wine into acetic acid. Alternatively, some older bottles of vinegar will have a mother. Vinegar mothers are like sourdough starters; they must be periodically fed. Once you have made a mother, you can use the same mother to make different kinds of vinegar (red or white wine). Great vinegars can be made using single grape varietals. Homemade vinegar is stronger that the store-bought kinds and people usually dilute the vinegar with water in order to lower the acidic content.

I would have to say that having read some of it, it would be easier to buy a bottle, but nothing ventured nothing gained.  Good luck with your efforts.

Thanks Valmarg, have read the link info, digested it, and am on the way to tescos to buy some vinegar, maybe one day I'll give it a go, but not today! :o

Tim,

Have to second the vote for cider vinegar & honey. I add a dash of apple juice and drink it with water. One of the most refreshing drinks I know of for the pasting heat we've been wilting under. :)

It's also a really good way of using up the honeyed water left over from washing beeswax cappings after we've been harvesting our honey!

How much cider vinegar and how much honey per day then?  Just starting to have trouble with a the index finger joints and want to "head it off at the pass" if I can.

I can't believe there's someone else out there who drinks this!  I grew up on the stuff and absolutely love it.  Before the hot spell I made a jar of Honegar, left it on the side and it's walked - probably into the bin by a well meaning cleaning assistant! Had to resort to a sploch of vinegar in water to get the desired "cut" on the pallette.

To make it take a jar of honey that's got about half an inch left, add the same amount of cider vinegar (or white whine, or champagne etc. wouldn't recommend malt!) put the lid back on and shake until the honey has disolved.

Use it neat by the teaspoon to soothe sore throats or dilute to taste with water - try starting on a tsp in a regular glass and increase from there.

EEsh!

If I drank vinegar I'd be crippled! I've always wondered why folk who get arthritis often suffer from indigestion too, as the drugs which help one hinder the other. I've had indigestion for years as has Dad, who also has arthritis. My fingers have been going for some years. Neither of us can cope with vinegar unless heavily disguised.

Mum, on the other hand, could easily drink it (as could her Mum). Does she get arthritis? Does she heck!

        For Obbelix, I drink two teaspoons of cider vinegar with one and a half teaspoons of honey, mixed a mug of hot water, once a day. Try this book Curing Arthritis the Drug Free Way by Margaret Hills, Sheldon Press, ISBN 0-85969-689-8. This book explains about C/V and Honey.

Thanks LesH.  I've actually got a copy of that somewhere.  I bought it years ago for my mum who is now almost crippled with arthritis in her knees, back and hands but she trained as a nurse 60yrs ago and firmly believes in the wonders of modern medicine so rejected it.  It's probably buried in the attic now but I shall go and dig it out.

As a long time arthritis sufferer I am going to give this a try for a while. I've just taken my first dose and it didn't taste too bad at all :). How long must I take this 'medicine' before I begin to notice a difference in my joints?

My Mum and my Aunt swear by it, but when they mention it to other people they do say that it made their hearts feel a little racey for a couple of days! :o
Aunt wen t on holiday and forgot her "potion" was in pain after a few days.
