Just been on another forum & there was a question about freezing veg
One reply was that for the likes of all Beans no need to blanche just Shell
or cut and put into freezer bags and freeze reckons not much loss in taste
for up to 12 months.
Any comments appreiciated on this one

I don't blanch veg as I plan to get things used within a shortish time. French beans, broad beans and peas do freeze very well. Runner beans go slippery. Purple sprouting broc freezes very well indeed and we had some tonight to test it and you really wouldn't have known it had been frozen. I freeze garlic and chillis and they are absolutely fine. I think the whole blanching discussion is really down to the individual - some will, some won't bother.
I agree, just eaten the last of my frozen, non blanched sweetcorn from last year's harvest. It tasted better than the so called fresh cobs from the super market. Garlic, sliced onions and Gooseberries are also just as good from the freezer as fresh. Dinger ;D
Agree - but it's funny how decades of advice from the top domestic science gurus can be disposed of so easily??
I HATE blanching - but I did it anyway with my courgettes last year. It is such a waste of water (I know, we can reuse the water but from a 3rd floor flat it is a hike to the garden).
Has anyone frozen courgettes without blanching?
Life is too short to blanche . I made tomato, basil and courgette soup which was reaaly good!!
I haven't blanched and the beans were lovely out of the freezer. Otherwise, make soup and freeze it! ;D

I roast them with some olive oil and herbs, and then freeze them ready to use in pasta sauces. I haven't tried freezing them without roasting so I don't know how they compare. I also roast tomatoes and add them to the roasted courgettes, then all I have to do is defrost a portion and I have a great pasta sauce :-)
It is good news as for as I am concerned, because this time of year things are coming thick and fast, and you haven't the time for any fancy preparations. :D busy_lizzie
