Title: Didn't grow shallots this year so...

Can I pickle some of my small overwintering onions that didn't bulk up thanks to the volunteer spuds drowing them out?  I am sure hunions is hunions, but I don't want to do it and then find them to huniony, or soft and slimey.   Thanks!  ;D

Short answer - yes, but they need to be good firm ones, shallots pickle well because they're pretty dense, so foloow same logic and you should be ok.

Definitely yes, all I've grown for past couple of years have been pickling sized onions much to my disgust! So into the vinegar they go (it also means I have LOADS under the stairs, which we still haven't eaten!)

Shallots last year were bigger than the blinking onions (Marshalls New Fen Globe too). This year it was bog standard stuttgarter giants and they are doing beautifully.
