One point which I gather from sites giving advice on freezing vegetables, is that beginners often feel it is necessary to blanche the produce first.
I rarely blanche, since the products are consumed within 6 months, and I have not noticed any deterioration.

I recently bought a book of freezer secrets.................the best info from it so far is for freezing onions - they recommend, as a lot of onions during the summer, on BBQs and over the winter in stews, are fried, do this before freezing!
I fry mine off, some with a little garlic, and then freeze them in yoghurt pots. They seem to be great and very useful :)
