Or is it a case more flowers will grow once the chilli at that point has been picked or is it just the one off pick that chilli and move on to the next place

If you haven't pinched out the growing tips they should carry on flowering and setting wether you take them off or not!

You get a flower and hopefully a fruit at every stem division, once picked no new fruit will develop at that particular division. As the plant gets taller the number of fruit at each layer should be greater, because of the ever increasing number of stems. Using a basic model, the first layer should produce one fruit, the second 2, the third 4 and so on.
NB: some varieties produce clusters of fruit at each division.
A vaguely related question - I'm growing chillies for the first time as well - I've two very impressive plants in my window and they're covered in green and red chillies. I've figured out that the red ones are merely ripened green ones, but does my leaving them on the plant mean that they're getting hotter and hotter? Or does colour not have anything to do with heat?

Colour effects flavour, green chillies have a more fruity flavour, while red are pure heat. I prefer green myself. I find most of the chillies I grow are so hot that I wouldn't really be able to notice the subtle difference it might make by leaving them on the plant longer.
