Usually OH makes jelly and puts some in a summer pudding (for my birthday)

I made a redcurrant and port jelly, haven't tasted it yet but is smells divine :D
We stuck some in vodka, think sugar was also added later. My mum licked her lips.
Wonder if they will work in any other spirits.
I was looking for some Redcurrant recipes yesterday, too. Ended up making Redcurrant Sorbet.
Didn't measure anything so quantities are a bit vague
- Puree the redcurrants with a little lemon juice. (maybe half a pound of currants, 2 tablespoons of lemon juice. Orange juice would work be just as good).
- Strain the puree to get the seeds out (not strictly necessary I suppose, but the kids don't like pips....)
- Add some sugar to the puree (maybe 3 oz?)
- Pour into an icecream tub and freeze.
- Take out of the freezer every couple of hours to stir and prevent ice crystals forming, until it's frozen.
Same recipe for blackcurrants, raspberries or a mix. Elderflower & lemon sorbet is one I like, too.
I have a recipe for redcurrant & onion relish (never made it) if you're interested. Otherwise I often use them with apples in pies, crumbles etc & with various quantities of other summer fruits for compotes & sauces. Oh yes, I do have a recipe for them in a steamed type pud if you would like that.
Fill a meringue with whipped cream and top with a mix of Raspberries and Redcurrants - heavenly!! ;D

If you have any really good strings, they open freeze well, and can be used as deccy on dishes in winter. They defrost as perfect as the day you froze them.
