Title: Over zealous with tomato plants.

So, when I sowed my tomato seeds I thought sow a little extra incase they don't germinate. Well they germinated, and I hate to throw away plants so I potted up most of them. I have counted around 50 - 60 plants, now while sitting in my greenhouse today I looked at the fruit already set and then the flowers still to set and I thought oh dear. Even if I only get 20 tomatoes off each plant I am going to have over 1000 tomatoes. So what in the world will I do with them all?
I am currently trawling one of my favoured recipe sites getting recipes for when they are ripe. ;D
The plants I didn't use went to a care home that  one of the men on my site gelivers medication to, so I know they will be used.

I've got 47 outdoor toms just starting to set; I can see vast quantities being given away.

I've only got 20 plants  ??? You could make loads of pasta sauce and freeze it.

I've heard of potatoes being grafted onto toms to get seed off them, but not this way round.

is that real never seen or heard of that befor wouldnt mind trying them wonder if you can get them in this country you would probably need super rich soil to feed the both of them i would imagine  :-\ ;)

Does anyone know of a recipe for tomato puree or sauce that doesn't involve refrigeration? What about bottling?

We did this ourselves as kids, along with the slightly less useful potato top onto a tomato base. I can't actually remember if we got anything to eat, but I know we had a high success rate with the grafts.

You might like to try this - Devilishly Hot Tomato sauce (rather apt for you Robert  ;D )
6 kg Roma tomatoes de-skinned by dipping in boiling water, pinch stalk end & squeeze out into pan.
Boil down to thicken takes about 1 ½ hours.
Wearing gloves, cut 5 red chillies underwater with scissors into rings, put into colander and rinse most seeds out.
Cut 4 small sweet red peppers into small squares.
Dessertspoonful of ginger (or 100g fresh processed to puree), cayenne pepper, black pepper and salt.
Boil down another hour. Cool until handleable.
Measure the puree, for each pint add 13 oz white sugar, and 4 fl oz vinegar..
Boil up to 102 degrees C stirring constantly (Phew!).
Bottle in clean sterile bottles. If you can’t keep the temperature of the liquid above 85 degrees when bottling and sealing, put bottles in a pan of  hot water on a trivet inside the pan and bring up to boiling, boil for 15 minutes, they will keep for up to 18 months then.
Makes about 4 litres.

i make passata with my glut.

peel tomatoes (if you can be bothered), chop tomatoes in half, scoop out seeds and juice. chop roughly and put in sauce pan. bring to boil and cook for 10 mins or so, then fill into bottles/jars and screw tight. i then like to huddle them all together and wrap them so they stay hot hot hot for a good while longer, and eventually cool off. i guess it's my approximation of a water bath or a hot oven to 'set' the glasses.

they kept very well indeed!

i also make variations to the 'nude' version bhy starting off with sweated onions and garlic, and adding herbs, before bottling.

Thanks. I can see some mad bottling going on over the summer; the rest of the family are well into tomato sauce so it doesn't make sense not to make a good lot when I've got free supplies of toms. I'll still be giving away bagfuls by the look of things.
