Title: White Chocolate Cheesecake - anyone have a good recipe?

Am hoping to make it for Fathers Day - my OH has been wanting me to make one since the day we met so i thought i would surprise him!

I think I've got a recipe for a baked one at home, remember it tasting nice and the family seemed to like, I'll have a look this evening as I'm at work now.

Too late for fathers day but this is a no cook white chocolate cheesecake.

Digestives crumbs and melted butter for the base.  6" round dish - depends how thick you like the topping

Beat 200g philadelphia with 2oz sugar till smooth.  Fold in 240ml of whipped double cream.  Fold in 200g melted white chocolate.  Smooth over the biscuit and chill for several hours.

I dont like this as I am not a big white chocolate fan but I have never made it without being asked for a second slice and the recipe.  Minutes to make but looks and tastes like you made a big effort.

Ingredients are a guestimate.  A dash of decent vanilla extract works wonders.
