Shared a chicken casserole, yesterday, with a dear A4A lady from the east of England. Cosy club, isn't it!
Couldn't bear to bin the left-over goo, so added some more stock, threw in the 4 legs from the thighs that we had yesterday, & put them in the bottom oven at 5pm, thinking that it would be more or less cooked through by bedtime. Got diverted by a delicious pilaf thing that Wife did. And a couple of Scotches.
Thank God I have wakeful nights. 1.35am - sudden thought - b---y thing's still in the oven. Not the first time, by any means!! So that's 8.5 hours? Padded down to extract it & put it in the larder.
And this morning it just fell off the bone - moist & delish. So, mash & left-over greens for lunch.
Yes - I know slow cooking is the vogue, but I prefer to plan it!!

Have to admit that my culinary mistakes (many and often!) often turn out better than something I have slaved over for hours!!

When I was a cleaning lady in Paris, I bought a cheap and stringy old fowl on the market and put it in the pot on the tiny stove in my attic with pot herbs and veg. And forgot all about it. My boyfriend turned up and we decided to hitch to the seaside. After a VERY long excursion (and several failed hitches) we arrived back home, late and tired, to the most delicious (and accidental) supper. I've never forgotten how good that old bird tasted after a long, hot day!

No, Sprouty - we don't 'do' turkey.
But a big freerange chick - or leg of lamb - or mutton? - I'll give time. Melty!
