Title: purple/grey shallots flowering question

Hi, last month I splurged on some French shallots, saved a few bulbs and planted them.

They seem to be quite happy and have divided into two. They look like they are going to flower. What should I do? Should I let them flower, will they seed into more of those expensive shallots?--They're really great to cook with and I would love to have more and for free!!!!

Break off the flowering stems same as you would with onions.
