Got my very first cut of pea sprouts.
Not knowing what to do with them - this being a culinary unknown - I ended up with:
- 1/2" fresh grated ginger
- small amount oil
- 2 handfuls rough chopped Pak Choi
- 2 handfuls pea sprouts
- egg(s)
Gently fried the ginger, then added the greens and a tablespoon of water for a very quick steam. Put the piping hot gingered greens on the plate, topped them with a poached egg, seasoned with a little pepper, and popped a slice of wholemeal bead on the side.
Very nice!
I've got lots of pea sprouts to go... plus any re-cuts (do they give you re-cuts??)... your culinary alternatives would be very welcome.

Sounds exciting!
Have only used them fresh + cca leaves etc - usually with a Balsamic dressing.
Need to chop a little or the tendrils get up your nose!!
Re-cuts? We've been cutting our second lot since 20/4.
