Found this recipe in this months waitrose mag, didn't have most of the required ingredients so adapted! ;) (In the mag they are called Pancetta, Olive & Taleggio Picnic Rolls)
They came out of the oven 45 mins ago, daughters plus 1 friend came home for lunch, none left to give hubby later! :-\ But they were easy & delish!!

Makes 8 rolls
250g Strong bread Flour
2 Tsp Fast Action Yeast
1 tsp Sugar
1 Tsp Salt
3 Tablespoons Olive Oil
150ml water approx
6 back rashers smoked bacon, chopped
Fresh sage leaves I used about 12, thinly sliced
Black & Green Olives, roughly chopped
Fresh Chives chopped
1 clove garlic chopped
I cheated and threw all the bread ingredients (flour, yeast, salt, sugar, 2 tablespoons olive oil,water) in my bread machine and put it onto pizza dough mode!
For the hand method, put flour in a mixer bowl with dough hook, add the yeast, sugar, salt and water (enough to make a soft dough) and knead for 8-10 mins or until smooth, add 2 tablespoons of the oil and knead for another 2 mins.
Heat the last tablepoon oil in a heavy pan and fry the bacon and sage leaves util crispy, drain on kitchen roll.
Roll out dough into an oval shape 30 cm long, and scatter over the bacon/sage, fresh chives, garlic and olives, roll up from the long side. Cut into 8 slices, lay each piece on its end on a lightly greased baking tray (so you can see the swirl) Squash down slightly, cover and put in a warm place to rise for 25-30 mins.
Preheat oven to 200c, Gas 6 and bake for 25-30 mins.

What a lovely recipe! Bet they smelled delish too. Going to save this one and give it a go one day when it's raining and I'm feeling inspired :D
