Title: Parsley Drop Scones
Post by: Hyacinth on May 08, 2006, 09:26:20
hmmm...might try these with my experimental potato and chive soup tonight :)

Ingredients

1 small onion

1 tbsp olive oil

1 clove of garlic

25g (1 oz) chopped fresh parsley

30g (1 1/4 oz) self raising flour

1/2 tsp baking powder

About 5 tbsp  milk

Salt and pepper

Instructions

1) Finely chop the onion and garlic, and fry in olive oil until slightly browned.

2) Put flour and baking powder in a bowl.  Add enough milk to give a smooth batter

3) Stir in the cooked onions and chopped parsley.

4) Heat up the frying pan and drop teaspoons of the batter into it.  Turn the drop scones over when bubbles appear, and cook them on the other side.  Serve warm.
