There's only so much parsnip wine I can drink, and I've got parsnip soup coming out of me earholes

A mash with potatoes and other roots is delicous - as the washer upper, not the cook it is a bit of a pain because there are so many pots afterwards

Risotto is supposed to be good too

MT - who said anything about health!!

But yes - mashed veg - carrots, sweet potato (not everyday ones for us!), swede, parsnips, celeriac - lots of butter & black pepper.

Parsnip mash (family favourite)

Boil parsnips til tender with a couple of cloves of peeled garlic or more to taste
Keep the boiling water
Put the parsnips and garlic with a generous thingy of butter in a blender, and whizz with enough of the cooking water to make the consistency of mash you want
Add salt and pepper to taste, and serve very hot with stews or veg

Hope you like it if you try it. Comes from a Fat Ladies recipe, I think :)

Actually it's the C J J Berry recipe for parsnip sherry from his book First Steps in Winemaking, I'd probably be breaking copyright laws if I posted it on here but if you're interested I'll send it in a PM, let me know

Parsnip freezes brilliantly; it's where most of mine goes. Unfortunately my wretched daughter has decided she soesn't like it, so I've planted half the quantitiy for this year.

Delias parmesan coated snips as mentioned by Debs feeze well in the first stage, then you just chuck them in a pan already coated to cook.

If you go to Good Food live and search parsnip they have some lovely sounding recipes, one caught my eye, Salad of Honey-roast Parsnips, Pears, Rocket and Macadamia Nuts with a Gorgonzola Dressing, sounds YUM!

Another didn't sound so yum, Parsnip and truffle Ice cream! :P :P :o

But they do have some interesting sounding recipes in there!
