Title: Home made oven chips

Anyone else do them? Bit of a faff but nice and crunchy result :)

I used King Edward potatoes today..

Peel, cut into chips, put in a bowl. Cover with boiling water. Allow to go cold. Drain. Repeat. Dry well (chips and bowl!) ;D

Stir in 1 tablespoon oil of choice and some salt, if you like. Allow to soak in.

Spread in a single layer on a baking sheet. Bake in a med.oven for about 30- 40 mins, turning 2 or 3 times, until done.

Oh, yes - but without the faff!!

Cut into wedges, shake in olive oil & GO!!
OK - so those are funnily shaped roast potatoes??

::)....yes Tim, but I'm talking oven chips not wedges or roasties ;D

To get the starch out (which also can be done by nuking them in water in a micro, but I'm not into living dangerously any more ;)) one needs this process first.

Don't usually, but I have done. I don't bother getting out any starch or whatever, just cut into chips, sling in a plastic bag, add some oil & shake it all about & stick in a hot oven for abot 25 mins ( after taking out of the bag). They are always very good, but I must say I usually use the frozen ones.

Don't do chips but I use the same procedures for roast potatoes.

If I do chips these days it's for Possum and I use organic frozen oven chips.  Easy peasy.

However, we all prefer smelly roasty spuds.  Take firm new potatoes such as Charlotte or Ratte or Pink Fir.  Wash off any muck but do not scrape or peel.  Cut diagonally in two or 3.  Place in a bowl with freshly crushed garlic, s&p, freshly chopped rosemary and a tbs of olive oil.  Stir throughly then tip into an ovenproof dish and bake at 220C till they go brown and crispy on the edges - 30 to 50 mins depending on size and quantity.

Yummy.  You can also use cxrushed coriander, cumin, and/or fennel seeds instead of rosemary if doing an eastern meal.

you've gotta try my home-made oven chip method and don't try to cut corners, Tim   :-*
