Tried n tested recipe, I usually chuck the ingredients in the breadmaker and let it do the knead for me!
Makes 12
1 tsp easybake yeast
500g/1ln 2oz Strong White Breadflour
1 tsp fine sea salt
300ml/1/2 pint water
1 tbsp olive oil
If using bread machine chuck it all in and put on white dough setting
If by hand, Sift the flour into a large bowl and stir in the yeast and salt. Add water and knead to form a dough. The amount of water you need will vary according to the flour: add enough to form a slightly firm, supple dough. Remove from the bowl and turn on to a clean surface.
Knead well for 10 minutes, then roughly flatten the dough and push in lots of little holes with your fingers. Pour on oil and knead it in. After 5 minutes, the dough should feel soft and silky. add the dough to an oiled bowl, lightly rubbing it in the oil. Cover with clingfilm and leave in a warm place until doubled in size (about 2 hours).
When ready turn dough onto a lightly floured surface and knead to knock out the air.
Divide into 12 equal pieces and shape each one into a ball. PLace on floured surface, cover with dry cloth, and let rest for 10 mins to make rolling out easier!
Preheat your oven and baking trays in too, to gas 9, 240c, 475f.
Flour your rolling pin and roll each ball into an oval about 6" wide and 1/4" thick, back onto floured surface and let rise for 20-30 mins.
Put as many as will fit bits of dough onto hot baking tray, bake for about 3 mins or until puffed up but not browned. Put on wire rack to cool slightly, beofre covering with dry cloth (to keep them soft) Cook remaining dough, and treat as usual!
