Brown rice, breadcrumbs, onion, carrots, celery, garlic, chilli, red kidney beans, lentils, raisins, pine nuts, herbs, seasoning - &, of course mince - if you're allowed it!

Cover with home-made tomato purée & bake till tender. Grated cheese if you wish.

Classic way (but cut the peppers lengthways)...chopped tomatoes (those from your freezer are fine) + chopped garlic + chopped chilli (both home-grown) + shredded anchovies (ooh, have to BUY them! - Sainsburys are good) drizzled over with olive oil (another buy :o)........bake until peppers are al dente. No need to add salt - anchovies will provide. Eaten at room temp as a starter, too, is delish.

This is my most fave way of cooking peppers  ;D

just checked out google,4,300 results ! how many ways can you stuff a pepper ??  lol   browsed through some of them.mouth's watering now !! thanks for putting the link on .

Wow, my mouth is still watering...  ;D I have a pack of pepper seeds and sowed 6 in pots last weekend, no sign of germination yet, but my book says it can take 14-21 days, so I need to stay patient...  I hope they are successful, as home grown and stuffed peppers sound fantastic.  Tim, thanks for your recipe; it sounds great.

Couscous, yes - but I would replace the rice with it?

Breadcrumbs I would only use if there's a good bit of liquid to absorb, or to achieve a slightly different texture.

If you were to put all the ingredients in, you'd have too little of each to make it interesting - I think.

Tim, I agree on the amount of ingredients, there should be a dominant flavour for the stuffing, and every ingredient should reinforce the flavour.

My OH is vegan & I stuff peppers & courgettes with a morocann rice recipe.  soften onions, mushrooms, peppers, garlic etc. add rice and loads of moroccan spices ( you can get a jar with mixed spices) cook for couple of mins till rice goes transparant, add some hot water (never measured it, use common sense, add more during cooking if needed) and cook until rice is soft, season to taste, add some vegan parmesan (or you lucky people can add real parmesan or other hard cheese) stuff yer veg and put in oven covered with foil (so dont dry out) for 20 mins or so, if your not vegan, u can finish off under grill with a cheese and breadcrumb mix.
I thouroughly recommend those asst jars of spice, african, morocann etc u can find them in netto and aldi and places really cheap

FWIW, I sometimes use jumbo oats to replace breadcrumbs, but they need toasting well in a dry pan first, or it ends up, not unnaturally, the consistency of porridge.

Having spent a lifetime using acronyms, I should feel comfortable with them now, but I always seem to struggle. One this occasion, I was lost too  :D Images of peppers being cross examined in court ...

Does anyone have a recipe for stuffed chillies, the kind that are sold in Italian delis?  The filling involves tuna, anchovies and capers.  They can be bought in jars, but are outrageously expensive so I just treat myself to a few bought by weight now and again! 

I am trying some F1 Cherry Bomb chillies this year, with the intention of making my own.  Anyone have a clue how to recreate this filling?

Either stuff them with a slow risotto, or boil your rice with a stock cube till just underdone.  start off a pan with olive oil (or home made flavoured olive oil) cook down finely chopped onion and finely chopped chorizo or strong salami, add peppers, mushrooms if desired.  Stuff the toms, black pepper on top w/ small blot of butter, bake till yielding (ovens differ) and serve.

Alternatively, a very very low oven overnight will dry them out a treat and preserve them (in herbed oil/freezer etc) for the leaner months.

We've a couple of jars of those I bought for nibbles and never opened because I've since had them from the deli and not been too impressed.  In future I would blend tuna fish with capers and anchovies and maybe a bit of spring onion or chives and some lemon juice till I liked the taste then spoon into those lovely spicy cherry sized honeydew peppers which can be bought at reasonable prices.

I've not tasted them but I'd do the same, Obb.Think it's possible to deseed & quickly blanch them before stuffing if the kick's gonna be too strong for when the vicar's wife comes round for tea.

Sundried tomaotes in jars can very terribly.  They should be resistant without being chewy and fleshy without being mush.  Try to find somewhere where they are sold loose and ask for a taste first.  Supermarkets are rubbish at the taste-first principle, so go for delis every time.

I've just been given a Jamie Oliver recipe that's quite similar.  You put the chillies(NOT tomatoes, bit of confusion crept in somewhere) in an oven dish, cover with olive oil, and cook at 375F for 45 mins.  Then cool, drain and fill.  the filling's not quite the same, no tuna.  I will experiment a bit as Obbelix says.

Hope the Cherry Bombs will be OK - the description says they're quite thick-walled so good for pickling & stuffing.  Want something with a bit of zing to it, without actually setting fire to me mouth!
